Delaware Online: Restaurants begin to see the lite

There's a new restaurant in Orlando, Fla., called Seasons 52 where nothing on the menu is more than 500 calories, desserts are the size of a shot glass and servers can look up nutritional information on their hand-held computers. But far from a faddish diet restaurant, Seasons 52 is the latest concept being tested by the very mainstream Darden Restaurants Inc., which also owns the Red Lobster and Olive Garden chains. Like several other restaurant chains, Darden is responding to greater public awareness of health and obesity issues and preparing for what it expects to be growing customer demand for healthier fare.
